This season, we’re proud to showcase a truly exceptional coffee from the misty highlands of Chiapas, Mexico. Sourced from the historic Finca Guadalupe Zajú, this micro-lot offers a rare expression of clarity and vibrancy that’s not often found in the region — making it a standout cup for any coffee lover.

Nestled along the famous Ruta de Café, the farm spans 310 hectares of fertile, volcanic soil at elevations of 1,300–1,400 meters, where the Marsellesa and Híbridos varieties thrive. Under the thoughtful care of Teddy Esteve and his family, the farm blends over a century of tradition with modern, sustainable innovation. From shade-grown cultivation beneath towering native magnolia and guava trees to selective hand-picking and eco-conscious processing, every step is designed to nurture both flavour and the environment.

Using a Pinhalense ecopulper, the farm efficiently sorts and washes the cherries while conserving water, reflecting a deep commitment to the surrounding community and ecosystem. Old mills have been converted into schools for local children, and water conservation initiatives continue to bring new life to the area.

The result is a coffee that sings with freshness and fruit. Expect bright notes of blackcurrant and cranberry, a juicy body, and a subtle complexity that unfolds with every sip.
